A Summer Dream Cake

This cake is everything I love about summer—two layers of “The World’s Best Cake,” topped with coarsely crushed almonds for a little crunch and filled with the most beautiful, creamy strawberry mousse.

The Greek Yogurt & Strawberry Mousse is what makes this cake so special. You can roast the ruby-red strawberries in the oven with a little sugar, or reduce them on the stovetop. Either way, you’ll get every drop of their juice, which gives the mousse that intense strawberry flavor and the prettiest rosy-pink color. It’s so fresh, so delicious, and just screams summer.

Between the cake layers, I’ve added even more fresh strawberries to keep it light and fruity. This version of the Norwegian “World’s Best Cake” is taken to a whole new level—it’s truly a summer dream.

I served this cake to my friends and family this summer, and they couldn’t stop raving about it. They told me it was the best cake they’d ever had, which honestly made my heart so happy.
