This cake is soft, tender, and bursting with banana flavor—without using mashed bananas. That’s right, I’m not making banana bread here. Instead, I use very ripe, spotty brown bananas steeped in warm cream infused with vanilla bean and a pinch of sea salt. 

This step ensures that every bite is packed with the most incredible banana flavor while keeping the cake light and delicate.

The only part that takes a little time is letting the cream infuse overnight, but trust me, it’s worth it. Once that’s done, the cake batter comes together in just five minutes!

 I love baking this in a heart-shaped pan because it’s almost Valentine’s Day—and honestly, it’s just plain adorable.

To top it off, I whip up my banana cream icing, made with banana-infused cream and powdered sugar. It’s so packed with banana flavor, you’ll want to lick every last bit off the spoon.
