Coffee Latte Cake with Fudge Brownies
Coffee lattes and brownies are my ultimate morning indulgence. There’s nothing better than a tiny bite-size brownie paired with a warm coffee latte to start the day. Inspired by this beloved routine, I created a cake that brings those flavors to life.
This cake features fluffy vanilla layers filled with smooth Coffee Latte Buttercream and bite-size fudge brownies that melt into the buttercream, giving it a truffle-like chocolate richness. It’s the perfect balance of coffee and chocolate in every bite.
The cake is made using only egg whites, but to ensure it stays moist and tender, I add a little sour cream along with heavy cream to provide just the right amount of fat for a luscious texture.
Soft and tender, the cake is lightly frosted—just enough to coat the layers—so it’s not overly sweet. If you prefer a fully frosted cake, you’ll need to make 1 1/2 batches of Coffee Latte Buttercream. Keep in mind, though, that a fully frosted cake will be sweeter.
If you, like me, adore coffee in the morning, perhaps with a brownie on the side, I hope you fall in love with the flavors of this cake as much as I have.
