Kransekake cookies are made from Marzipan. Making marzipan for baking at home is super simple and made in minutes and so much more delicious than the storebought version, which has more sugar than almonds.
For this recipe, you can use storebought super-fine almond flour made from whole almonds with the skin intact to make marzipan/marzipan cookies or do as I do grin whole almonds with the skin intact.
Using fresh, unprocessed raw almonds with the skin intact gives these cookies a distinctive appearance and texture, and they taste even more delicious.
These cookies are grain-free and gluten-free. Using super-fine almond flour lends a moist texture-rich and buttery flavor to these cookies.
