For this recipe, I use a popular Norwegian candy called Fox Lemon, which is incredibly juicy and has the perfect balance of tartness and sweetness.
But don’t worry—even if you can’t find Fox Lemon, any good-quality lemon taffy will work beautifully.
Lemons are universally loved, so finding a suitable candy won’t be a problem.
What makes this ganache so special is how it combines the bright, zesty flavor of lemon taffy with the richness of chocolate. The result is a thick, creamy, and luscious ganache that you can use in so many ways. It’s perfect as a cake filling, a frosting to spread or pipe on the outside of a cake, or even as a dip for your favorite treats.
