I have always loved the combination of lemon and yogurt in my cakes; The acid in the yogurt, ricotta cheese, and lemon juice is what makes this lemony cake so delightfully soft and tender.
The cake is glazed twice: First, a lemony syrup that soaks into the still-warm cake, and seconds a thin, glossy icing is applied once the cake is fully cooled, Together they are the perfect match.
This cake takes about 10 minutes to prepare and is one of my top 5 favorite cakes to make all year round, you can make it in a small baking pan as I do or in a round baking pan, either way, it is so good!
