As a child, these heart-shaped waffles were one of my favorite cookies to enjoy. My mom, who is Norwegian, made them frequently, especially during the holiday season.
These traditional Norwegian cookies are baked in a heart-shaped waffle iron. Right after baking, they turn crispy—almost like a biscotti. Just know that these are not soft waffles; these are waffle cookies that are meant to be crispy.
The cookies are made with a combination of all-purpose flour and potato starch, giving them their unique texture. (It’s important to note that potato starch, not potato flour, is used.)
For fun, you can add confetti to the batter. However, traditionally, we eat them as they are. If you want to add a little pop of color, feel free to mix in a handful of confetti, but these cookies are delicious on their own.
