Oh, Cherry & Troika Cake
This cake is the perfect mix of fresh, fruity flavors and rich chocolatey goodness. Topped with a light Crème fraîche frosting and fresh cherries, it’s a dessert that just screams summer with its bright, cheerful look.
The cake starts with three fluffy vanilla sponge layers, and between them are all the good things: light and tangy Crème fraîche frosting, crunchy almond cookie crumbles, pieces of nougat chocolate, cherry Jell-O, and fresh raspberries. Every bite is a mix of textures and flavors—sweet, tangy, crunchy, and creamy.
One of my favorite candy bars from Norway is the famous Troika. It has layers of marzipan, nougat, and Jell-O covered in chocolate, but since it’s only available in Norway, I decided to recreate it as a cake. Instead of marzipan, I’ve swapped in almond cookie crumbles for a little extra crunch. Honestly, it takes this cake to the next level!
There are a few steps to making this cake, but don’t let that scare you. Each step is quick and easy, and the result is so worth it. It’s perfect for summer gatherings, birthdays, or anytime you want a dessert that’s a little extra special.
