Creamsicle Icing
If you love a glossy, vibrant icing with the bright, citrusy flavor of blood orange, you’re going to love this one! This icing has a mood-lifting effect, thanks to its fresh, juicy citrus aroma.
Freshly squeezed blood orange juice adds a juicy kick, making this icing extra special—especially when blood oranges are in season. When they’re not available, clementines work beautifully as a substitute.
To heighten the blood orange flavor, I added a touch of citric acid, which brings extra zestiness, while glucose gives the icing its gorgeous glossy finish on cupcakes and cakes. Best of all, it stays beautifully intact for up to two days without crusting, striking the perfect balance between sweetness and shine.
For an extra burst of citrus, you can add finely grated blood orange zest at the very end. You’ll see beautiful little flecks of blood orange throughout the icing, enhancing both the flavor and the look—it truly makes it even more delicious!
This icing pairs perfectly with chocolatey or vanilla cupcakes, or as a stunning topping for your favorite cakes.
