Perfectly Whipped Salted Caramel Ganache

At its core, this is a salted caramel ganache whipped with butter, creating a texture that’s lighter than traditional ganache but creamier than buttercream. I use salted butter to take the flavor to the next level, enhancing the caramel’s deep, toasty notes.
The process starts by making homemade caramel with sugar, water, and glucose, cooked until it turns into a deep amber caramel.
Separately, I heat cream with sea salt, vanilla bean, and vanilla bean paste, then pour it over the caramel. This creates a beautifully balanced salted caramel base, which is then combined with dark chocolate.
Once smooth, it’s whipped with butter to achieve that fluffy, melt-in-your-mouth consistency.
The secret to the best flavor? Let the sugar caramelize just enough before adding the cream. If you don’t, the caramel will be too sweet and lack that rich, slightly burnt depth that makes it so irresistible.
