This Salted Caramel Swiss Meringue Buttercream – A Caramel Cloud in Every Bite
If you love caramel but don’t want an overly sweet buttercream, this Salted Caramel Swiss Meringue Buttercream is the perfect balance of flavor and texture.
It whips up like a caramel cloud, is silky smooth, and pipes like a dream on cupcakes.
Traditional Swiss meringue buttercream is usually sweetened with caramel sauce, but that often results in a sugar overload—and I’m not a fan of overly sweet frostings.
That’s why this buttercream is made with salted caramel sugar instead.
By caramelizing sugar with just a little water, then grinding it into a fine sugar base, you get pure, deep caramel flavor without extra sweetness.
The result? A perfectly balanced, cloud-like buttercream that lets the caramel shine.
The crème Fraiche in this recipe brings the overall sweetness into balance, making it less sweet and silky smooth, velvety, and so delicious.
