Gooey, Brownie Cookies with Salted Peanuts (GF)
These cookies boast a fudgy interior and a shiny, crackled top. Loaded with dark bittersweet chocolate and salted peanuts, each bite delivers a delightful crunch that compels you to reach for another.
I love using salted butter for these cookies as it enhances and highlights the flavors of the other ingredients. However, if you cannot find good-quality European salted butter, I recommend using unsalted butter instead, as not all salted butters are created equal.
These brownie cookies will melt in your mouth, much like a chocolate truffle – simply irresistible.
You can make them as large cookies or bake them in mini cupcake liners. Store them in the freezer and enjoy a small piece each day with your coffee.
