Sour Cream & Coffee Chocolate Cake

Makes: 2 x 20 cm 8-inch cake layers

Sharing one of my favorite go-to recipes for a chocolate cake that stays moist and fluffy for days! This cake is incredibly tender and moist, thanks to the addition of sour cream, which keeps it delightfully soft.

For extra depth of flavor, I also add strongly brewed coffee to the cake batter. Even if you think you don’t like coffee, trust me on this one! The coffee enhances the chocolate flavor without adding a strong coffee taste.

This cake bakes up like a dream: fluffy, soft, ultra-moist, and deeply chocolatey. You can top it with anything you love: a rich chocolate frosting, marshmallow frosting, or even a classic buttercream.

Bake this cake in two 23 cm (9-inch) round cake pans, in a half-sheet pan, or double the recipe for a larger baking sheet. It’s versatile and pairs perfectly with your favorite frosting.
