White Sugar – Granulated sugar
When I call for ” white sugar ” in my recipes this is the sugar I´m talking about.
It is often called “granulated sugar”
Superfine Sugar/Caster Sugar
At times I call for superfine sugar, also known as ” Caster sugar ” it can sometimes be hard to find in a regular grocery store.
Superfine sugar is made from white sugar/ granulated sugar that is pulverized to a finer texture.
You can pulse white-granulated sugar in a coffee grinder to reduce the size of the granules by one-half,
I prefer using my blender to make superfine sugar, I add about 200 grams of white sugar/ granulated sugar at a time.
Pulse on low for 5 seconds, I shake the sugar mixture once put it back on, and do another 5 seconds on low in the blender to make it finer.
Confectioner´s sugar – powdered sugar – icing sugar
Confectioner´s sugar often called for either powdered sugar or icing sugar in other countries.
Confectioner´s sugar is made from white sugar/ granulated sugar that is pulverized into a fine powder.
I most commonly use it when making cream frostings, or glaze it dissolves almost instantly, leaving the mixture very smooth.
