Tea-Infused Sponge Cake

This recipe brings out the lovely flavors of your favorite tea—whether it’s the warm spice of cinnamon (my personal favorite), the citrusy notes of Earl Grey, the cozy richness of chai, or even the delicate freshness of green tea.
What makes this sponge cake so special is the tea-infused cream. Instead of adding tea directly to the batter, I steep the tea in warm cream, squeezing out every bit of flavor. This warm cream is then added at the very end, infusing the entire sponge with its essence while also giving the cake a beautiful lift.
