In Sweden, we have a tradition called fika, meaning a coffee break with something sweet, and one of my favorite cakes to serve during fika is a princess cake.
This is a variation of the classic Swedish princess cake, which is typically covered in green marzipan and decorated with a pink rose. Instead, this is a White Strawberry Princess Cake.
This version is made with a light sponge cake, without any butter, and filled with layers of homemade raspberry jam, creamy pastry cream, and whipped cream mixed with fresh strawberries.
It’s wrapped in white marzipan, lightly dusted with confectioner’s sugar, and topped with two fresh strawberries, making it a beautiful choice for any occasion.
