I use yeast whenever I´m making dough for my sweet rolls.
I most always use fresh yeast, You can find it in the refrigerated section at your grocery store.
If you can’t find fresh yeast you can also use dry yeast instead.
In my sweet dough, I use either 20-gram fresh yeast if I place the dough in the fridge overnight ( overnight dough)
Or I use 25-gram fresh yeast if using the dough the same day.
For all my sweet rolls recipes using Fresh yeast, I recommend using cold liquid, (I use cold milk) I use cold milk because the kneading time is so long and if the dough gets too hot it can kill the yeast.
If you are using dry yeast you need to use lukewarm liquid ( milk) to activate the yeast.
Baking with fresh yeast is always the best, also the rising time is less, then if you are using dry yeast. If not available in your country.

Fresh Yeast – dry yeast converter
- 5 gram fresh yeast = 1/2 teaspoon dry yeast
- 10 gram fresh yeast = 1 teaspoon dry yeast
- 15 gram fresh yeast = 1,5 teaspoon dry yeast
- 20 gram fresh yeast = 2 teaspoons dry yeast
- 25 gram fresh yeast = 1 tablespoon dry yeast
