Creamsicle Roll Cake with Fresh Creamsicle Whipped Yogurt Frosting and Strawberries
This Creamsicle Roll Cake is filled with a fresh, citrusy Creamsicle Whipped Yogurt frosting combined with strawberries—a dreamy combination perfect for any occasion. The vanilla roll cake, infused with blood-orange zest, bakes up light and tender in just 5 to 7 minutes.
The Creamsicle Whipped Yogurt frosting is absolutely irresistible on its own—fluffy, creamy, and bursting with citrus flavor. Trust me, you’ll want to lick the bowl! For the filling, I combine the frosting with strawberries, and depending on the season, you can use fresh strawberries, freeze-dried ones, or even blood-orange segments for a citrusy twist.
When strawberries aren’t in season, freeze-dried strawberries work wonderfully. I soak them in freshly pressed lemon juice and lemon zest before using them to release their incredible flavor and make them juicy and vibrant. This process gives the filling a lovely natural pink color that deepens as the cake rests in the fridge, making it even more beautiful and delicious.
Since Valentine’s Day is tomorrow, I added a chocolate heart on top of each slice—so simple and cute! It’s the perfect touch to make this cake extra special for the holiday.
