Vanilla Bean Flan Cake – a fluffy sponge cake layer topped with a delicious vanilla bean pastry cream, baked until the top of the cream turns a beautiful golden brown.
Flan is one of my all-time favorite French pastries. The original flan, as seen in Paris, is often made with a pâte brisée sucrée crust, but I’ve never been a fan of that type of base. In this recipe, I use a sponge cake base instead, which creates a unique and delightful texture.
This flan cake is incredibly delicious and tastes even better the next day.
