For these vanilla cupcakes, I use almond flour, the almond flour is simply skinless, blanched almonds ground to a super-fine texture.
The almond flour lends a moist texture and rich, buttery flavor to these vanilla cupcakes.
The raspberry mascarpone frosting is such a great combination with the gluten-free vanilla cupcake and the raspberry juice in this frosting just gives the most beautiful shade of pink.
