Makes: 15 buns
My favorite pastries and buns are those with custard, a love I inherited from my mom, who hails from Bergen, Norway—where they make the best ones.
Skolebrød, a classic Norwegian custard bun, holds a special place in my heart.
In Norway, we call it Skoleboller, meaning “School Buns.” It’s a soft, sweet bun filled with delicious custard.
After baking, I glaze them with icing and sprinkle the top with coconut, following the traditions my mom shared with me.
This is my absolute favorite Norwegian sweet roll, a taste of home inspired by the best Bergen has to offer.
