Today, I’m sharing a recipe for a classic Swedish Cinnamon Bun—known as “Kanelbulle” here in Sweden. These rolls are more than just a treat; they’re a tradition! In Sweden, we even have a whole day dedicated to them—October 4th, National Kanelbulle Day—where bakeries and kitchens across the country are filled with the sweet scent of cinnamon and cardamom.
This version of the beloved Kanelbulle is extra special. It’s filled with a homemade almond paste flavored with a touch of cinnamon, giving it a rich, nutty sweetness that makes every bite unforgettable. Rolled to perfection, these buns are topped with pearl sugar and sliced almonds, and then glazed with a sugar syrup right after baking. The glaze not only gives them a beautiful shine but also keeps them soft and moist all day long.
Whether you make the dough on the same day or let it rest overnight in the refrigerator for a deeper flavor, these buns are sure to be a hit. They’re warm, cozy, and perfect for sharing with loved ones—especially with a cup of coffee or tea on a crisp fall morning.
So let’s roll up our sleeves and bring a little taste of Sweden into your kitchen!
