Vanilla Cupcakes & Blackberry swirl

Makes: 24 medium-cupcakes

Fluffy Vanilla cupcakes filled with a fresh blackberry jam and topped with a lovely blackberry marshmallow meringue for the ultimate treat.

The blackberry jam is made with frozen blackberries. Blackberries are not too sweet. It is so fresh and juicy, especially when combined with lemon.

I drain some of the blackberry juice to reduce it and to make the blackberry marshmallow meringue, which whips into a beautiful natural light pink cloud, and pipes like a dream onto your cupcakes.

The blackberry flavor in the meringue is mild, but you’ll know it’s there. It pairs wonderfully with the tender vanilla cupcake and the homemade blackberry jam filling. The blackberry jam contains only one tablespoon of sugar, so it´s light and a perfect match with a sweeter ( but not overly sweet) blackberry frosting on top.
