                                                             	2 lbs (ABOUT 1 KILO) BERRIES OF YOUR
                                                             CHOICE, SUCH AS STRAWBERRIES,
                                                             RASPBERRIES OR BLACKBERRIES
                                                             	1 ¼ - 1 ⅓ CUP (250-300 g) JAM SUGAR
                                                             	FINELY GRATED ZEST FROM 1 LEMON
                                                             	Rinse the berries and put into a large pan with
                                                             the jam sugar and lemon zest. Give it a good
                                                             stir, cover with plastic wrap and place in the
                                                             refrigerator. Chill for a couple of hours.
                                                             	Remove the pan from the refrigerator and
                                                             place over medium heat. Bring to a boil, stirring
                                                             regularly. Simmer for about 5 minutes, or until
                                                             thickened.
                                                             	Remove from the heat and leave to cool a little.
                                                             Pour into clean jars.
