                                                                Waffle cookies
                     	4 EGGS                                    	Place the eggs, one egg yolk and sugar into
                     	1 EGG YOLK                                a mixing bowl and whisk until pale and airy.
                     	1 ⅓ CUPS (270 g) GRANULATED SUGAR         	Sift the potato starch, flour and baking
                     	2 CUPS (300 g) POTATO STARCH              powder into a separate bowl, and then add
                     	2 CUPS (250 g) ALL-PURPOSE FLOUR          to the whisked egg mixture, followed by the
                     	2 tsp BAKING POWDER                       melted butter and vanilla extract. Stir until
                     	1 CUP + 1 tbsp (250 g) BUTTER, MELTED     everything is well blended and the mixture
                     	1 tbsp VANILLA EXTRACT OR VANILLA PASTE   is lump free and smooth.
                                                                	Heat your waffle iron. Grease if necessary
                                                                and pour the batter in with a ladle. Cook for
                                                                5-6 minutes, until the waffles are golden
                                                                brown, and transfer to a wire rack to cool.
                                                                Repeat with the rest of the mixture.
